Mini muffin pan!

As you know I am always trying to perfect how I handle the boys raw ground turkey... I had been pressing it in a cookie sheet scoring it and then breaking it apart as it was almost frozen. lots of frozen turkey flying around the kitchen. So today I went out and got a mini muffin pan. Each hole is a bit less then an ounce...filled two pans froze it...and hopefully I will have my own little one ounce medallions of ground meat with less struggle.

I thought those of you that make your own concoctions of raw (or cooked) could use this tip. It sure beats rolling meatballs. And I like that it gives you a measured amount.

Missy- how hard is it to get out though? I just used an ice cream scooper for ounce balls on a cookie sheet and then putting it in the deep freeze for a few hours and putting it in a bag. While they aren't perfectly round, my pups don't care!

Pampered Chef has different size scoops for cookies but I'm sure you could use them for anything.

Wow. I never thought of an ice cream scoop (of course because I had one of those and didn't require a purchase ) But I have to say this was so easy. you can keep one hand clean and just fill the cups with the other. and unlike my previous method where if you froze them too long the squares were hard to get apart...these just popped right out and they were really frozen. and in the freezer bag they went. It was a non stick pan and I sprayed a bit of olive oil on the bottom.

I know they have regular sized muffin pans in silicone which is really easy to empty so they probably make the mini-muffin pans in silicone, too.
